Stuffed Triggerfish

Chop up some celery and onions into a package of
Stovetop Stuffing add a little Old Bay Seasoning mix and cook until
about half done.
Put a quarter cup(MOL depending on the fillet size) of
this HOT stuffing on top of a Triggerfish fillet then pin the opposite
fillet on top with a couple of toothpicks. Sprinkle a little Old Bay
Seasoning or Lemon Pepper on top and bake 15 minues at 350 degrees.
If your stuffing mixture is hot when you put it on the
fish, 15 minutes should be plenty.
If you want to add a really nice taste and good looks
to the dish too, smear whole mayonaise on top of each portion,
sprinkle on a little Paprika then place under the broiler until the
Mayonaise begins to brown.
I am sure there are better stuffings but this is
quick, easy and mighty good.

Fine, firm, white and tasty. Grilled with a touch of
Lemon Pepper and a light brush of Olive Oil, served on a bun with
Tartar Sauce and a side of Cole Slaw. MMMMM!
Lightly battered and fried works for a sandwich too.
