Easy Scallops

                               One pint scallops

                              1/2 stick (real) butter

                              Old Bay Seasoning

                              Lay scallops in baking dish (not touching)

                              Slice butter up and spread over scallops

                              Spread seasoning over scallops liberally

 Bake @ 350* for 15 minutes  Turn scallops  Bake @ 350* for an additional 10 to 15 minutes and  serve hot.   Fast, effortless and delicious. (PS They scallops are best when just turning opaque, do not let them brown)

  

Scallop Ceviche

it's getting to be that time, here's my favorite way to eat them


1 1/2 pounds scallops (or shrimp or white meat fish)
1/2 cup and 3 table spoons fresh lime juice
1/2 teaspoon salt
1 tablespoon chopped cilantro
3 avocados peeled, seeded, and cubed
3 small tomatoes skinned, seeded, and sliced thin
1/3 cup vegetable oil
optional ingredients
1 jalapeno seeded minced finely
one small white onion sliced thinly
1 fresh garlic clove minced

combine scallops, 1/2 cup lime juice, salt, and cilantro in a glass bowl (don't use metal or plastic!), toss to mix, cover and refrigerate overnight when ready to serve, drain and add avocados, tomatoes, oil, and the three tablespoons of fresh lime juice, sprinkle with salt, serve with tortilla chips and dos eques or bohemia beer that's the original recipe (except the dos eques); i like to add the garlic to the mix that sets over night and the onion and pepper with the avocados and tomatoes
