Blue Runners

  Blue Runner Salad.

Fillet, skin, de-bone and trim excess red meat from enough Blue Runners to give you about 1&1/2# of meat.  

Add a quart of water to a pot and bring to a rolling boil over highest heat. Aee a teaspoon of salt then throw in the Blue Runner fillets. Cook for one minute after water returns to a boil then drain.   Flake the Blue Runner fillets up and add one can of Tuna packed in oil add the oil in also and mix thououghly. 

Chop 4 hard boiled eggs, 3 heaping Tablespoons of Sweet Pickle Relish, 1 Tablespoon of Dill Pickle Relish, one medium onion chopped, 1 cup chopped celery and mix thoroughly.  Add Helman's Mayonaise to taste. 

 

Blue Runners

Fillet 'em, skin 'em and boil them. Flake the meat up and it makes a mighty nice substitute for Tuna Salad. For a variation, add a chicken Boullion Cube to the pot when boiling. Remember---It doesn't take long to cook fish. About one minute for Runners as long as you don't add too many fillets to the pot at a time.  

You can also use the boiled Runner with a little cracker meal, egg, and chopped onion to make mighty fine fish cakes.  

Greg Longhurst makes a really good fish dip out of smoked Runners. They smoke up mighty nice
