Fillet 'em, skin 'em and boil them. Flake the meat up
and it makes a mighty nice substitute for Tuna Salad. For a variation,
add a chicken Boullion Cube to the pot when boiling. Remember---It
doesn't take long to cook fish. About one minute for Runners as long
as you don't add too many fillets to the pot at a time.
You can also use the boiled Runner with a little
cracker meal, egg, and chopped onion to make mighty fine fish cakes.
Greg Longhurst makes a really good fish dip out of
smoked Runners. They smoke up mighty nice
